These grapes are soaked and fermented on the skins for 7-10 days. After the wine is pressed off the skins we allow it to ferment to a predetermined sugar level. At that time we fortify the wine with an aged high proof brandy; this halts the fermentation and leaves the wine with some residual sugar. This vintage was aged for 5 years. Great with cheese and chocolate based desserts.
