Our take in a classic port style wine. The grapes are fermented on the skins for 3-5 days. At that point we press the skins and fortify the pressed wine with aged brandy. The resulting wine has quite a balance of residual sugar (from the grapes) and bright flavors. We age in neutral barrels to highlight the fruit characteristics. Pair with any chocolate dessert!
