In certain parts of the world there are wines that are made from individually selected botrytis infected grapes; they are referred to as Trockenbeerenauslese (TBA), a type of mold that can grow on grapes. If the stars are aligned the mold causes the grapes to dehydrate, concentrating the flavors and sugars. The grapes are harvested by hand selecting only the best of the infected clusters. The fermentation takes most of the fall and into the winter. Wines made from Noble Rot grapes have complex and pronounced flavors of honey and caramel and are high in residual sugar. Aka dessert in a bottle!
